In addition to Red Steel, there are also the Creature Crucible books, which put together exponentially expand the number of races available. One neat thing I've done in past Ravenloft campaigns was make "Night Howlers" -- a Creature Crucible product that details playing Lycanthrope characters -- available to players alongside the "Requiem" rules for playing as Undead.
