Ok, I've had some more thoughts about this, taking a 'standard' 23 ton 
tyrant ship, and assuming that beholders have the same life support 
requirement as humans (big assumption - I think the hive mother, at 
least, should count as two). The minimum crew is listed as 15, with a 
max of 23.
A crew break-down could be:
Minimum
1 hive mother (counts as 2)
4 orbi (gives SR 4)
4 'true' beholders
5 slaves/lesser beholderkin

Maximum
1 hive mother (counts as 2)
5 orbi (gives SR 5)
5 'true' beholders
11 slaves/lesser beholderkin

I think that beholders would, given an opportunity, max out their crew 
with expendables (lesser beholderkin and/or dominated slaves) to have 
a supply of strong backs / cannon fodder / extra food.

Bigger ships have a greater proportion of expendables, as well as the 
occasional specialist beholder-kin.

Ok, what does this mean for the deck plan, taking the 'bowl' shaped 
hull, the 'top' deck shows the inside of the bowl. The 'base' of the 
bowl is thickened, and includes a slave/cargo deck with a reversed 
gravity to the 'top' deck.
