They COULD do this, but the pirates' interests are better served by taking
the valuables (gold, silver, jewels, spellbooks), some of the consumables (food,
water, ships' stores, and yes, our real-world pirates often did this), the
more valuable portion of the cargo, and disabling the ship for a while.  Dead
ships--or disappearing ships--will provoke responses from the Company of the
Chalice, EIN, PoTs, and others, including space navies and pirate hunting
adventurers.
