I would think the reason why he wants his solitude
should be included, namely whatever research project
will keep him occupied for months or years on end.
Air can be refreshed easily enough with wall of fog or
fog cloud.Horn of Fog would also serve this function.
Water by the decanter of endless water should be fine.

I do like the suggestion of the Mirror of mental
prowess since that could allow many methods of
restocking supplies.
Rod of Security has certain benefits and that operates
at about 200 days per charge if I recall correctly.
Plant growth would allow for 'natural' replenishment
of both food and air, especially if used to form a
thicket of edible plants, also allowing for grazing
animals which could be used for food. Creative use of
the polymorph spells and breeding of the results could
sustain chickens or perhaps rabbits for meat. Once the
polymorphed creature breeds more of the same, it would
not matter if it returned to the original form on
death.
Familiars might enjoy the hunt for food among the
thicket. Besides, only those animals desired for the
environment would be allowed/created.
I remember a particular Transformer who travelled with
his cage of mice for polymorphing into useful beings,
So what if the creature thought like a mouse for
awhile...
Then of course there are Murlynd's Spoon and the
Everbountiful soup kettle.
