I don't think they change everything into a uniform substance, I think they simply ACCELERATE (thus the name) whatever is put in them to such a high velocity that no matter what it was when it went in, the effect is the same. Example: If I threw a quarter at you from across the room, it wouldn't hurt (unless I sent it through your eye or it got stuck in your nose or whatever, there are always crazy exceptions), but if I dropped that same quarter off the Empire State Building and it hit you, I imagine it would hurt quite a lot (or not, it might kill you instantly). Why? Because force = mass x acceleration (I think... I haven't taken any science courses in a good long while).
