If you're not sure what abilities to take away or change, then you're just
changing them for the sake of changing them.  That's not a good reason to
change a race.  You should have a background or setting reason for wanting
to change something.  For example, in my campaign, Dwarves do not get any
bonuses for fighting Giants because their homeworld doesn't have any giants
on it.  They get the bonus against orcs instead because, in my setting, orcs
are the ancient enemies of the dwarves.
