The artists aren't doing scale renderings. They're artists. And it's hard to be accurate on scale without computer modeling for something that's never existed in real life (and thus you've never seen any sort of pictures of to give you a sense of the true scale). Deckplans should reflect the given dimensions. Is that enough help? If you make a 100' x 15' ship that's close to 6 tons (whether over or under) you'll be doing better than TSR ever did.
