The reason for this is not that ships in the "old days" were any better at standing up to the punishment that cannons or even catapaults and ballistae could dish out. It's that the Spelljammer combat system makes them much more accurate weapons than they actually were. Imagine a bunch of kids running past each other with slingshots, that's how accurate things actually were. But to try to interpret that into the system is, IMO, not really practical, and makes the system unwieldy and not much fun. Perhaps a combat phase where the target ship had a chance to maneuver out of the way? I haven't tried this, so I have no idea how it would work.
