Well, you know, the logic behind the tech is that Episode One is in the age of the Great Empire, before society, and technology with it, started to fall apart. So the tech is still reliable and pretty. The Romans had spectacles, pipe organs, and ice cream, and the knowledge of these things was lost as their civilization fell. The earlier Star Wars tech (in terms of production, not Chronology) represents jerry-rigged versions of the technology that's still readily available in Episode One. Imagine what would happen to computers if we had a worldwide plague tomorrow and our civilization started to fall apart. I'm sure you've seen enough si-fi to imagine it. :) (I know I have!) But I'm with you about the loss of pilot dialogue and the latex. There was less focus on the "little people" in Episode One; and that aspect is one of the things that made the trilogy so real and so poignant for me.
