I do not see how a 19th century weapon will be more efficient than a
fireball and spellcasters do not make other classes or
weapons obsolete.

However, in my campaigns the technology is limited as well, because I
do not want to give spelljammer a warhammer fantasy like feeling,
where there are dwarven helicopters, steam driven tanks, etc.

I think it would not exactly "ruin" the flavor, but change it - and I
prefer the original flavor as well, though I do not see a problem in
giving the scro better technology.
