The character in question, on his own, came up with the following
ideas on this.

First, brains are the perferred food. They have the most 'flavor' and
nutritional value. This is also almost the only food they can eat. There are
only three other foodstuffs that are even remotely palatable to them. These
would be: heavy red wine, broth (soup), and the oatmeal made by a 'create
food & water' spell.
The wine is obvious - everyone likes some alcohol, and it looks like
blood. The broth is also related to this. If the Illithid could only eat
brains, they wouldn't be nearly as numerous (run out of creatures too fast).
So, they would make a form of soup using blood and some flesh. The last comes
from the descritption of the spell. After all, that stuff isn't really
appetizing to 'normal' characters either.

I don't remember what we did for the schedule of feeding. I do think
we had it that on a normal diet, one brain every week would be fine. Possibly
pushed to the 10 day number with proper training. One could survive on the
other foods for a bit, but it would eventually HAVE TO HAVE a brain. (Both
from nutrition and just pleasure) In the early stages of the game, it did get
interesting.
The player forgot to take good care of his kills, and they got found.
At the time, the party was hunting a spirit, and they made the illogical leap
that the spirit was responsible for the odd killings (missing back of skull and
having an empty head). It was quite amusing.
