No, the helmsman can control (roughly) the direction and maneuverability
of the ship.  Else, how could the Viper and Flitter move?  Those, officially,
have only 1 crew member, yes?

For added maneuverability.  The way I see it, a spelljamming ship is like a
big car with power steering.  If you're trying to steer the ship without
using the power steering, it can be done, but the response is sluggish,
and the maneuverability is poor (anyone who has had their PS-car stall on
while driving knows this feeling).  The rigging and the crew members are
the power steering _turned_on_ - smooth turns, good maneuverability.

It is posible to run a big ship w/o rigging or crew, but you're pretty much
a sitting duck for a ship with crew.

They do ... but to operate at the ships listed MC, they need the rigging
crew (that's why, when you design a new ship, you have to pay for the
else the MCis one class worse).
